Creamy Coconut Vegetable Soup (Cozy, Silky & Ready in 30 Minutes)

This creamy coconut vegetable soup is rich, cozy, and packed with tender veggies in a silky coconut broth that feels comforting but fresh at the same time. It’s warm, flavorful, and comes together fast in one pot!

Ingredients

  • 1 tablespoon olive oil or butter
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger (or ½ teaspoon ground)
  • 2 carrots, diced
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, chopped
  • 1 cup cauliflower or potatoes, diced
  • 3 cups vegetable or chicken broth
  • 1 can (13–14 oz) coconut milk
  • ½ cup freshly shredded Parmesan or mozzarella (optional but elegant richness)
    • Optional shortcut: skip cheese if keeping it fully coconut-based
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon turmeric or curry powder (optional but cozy)
  • Fresh herbs or microgreens for topping
  • Optional sesame seeds for garnish

Instructions

  • Heat oil in a large pot over medium heat
  • Add onion and cook 2 to 3 minutes until soft and fragrant (Caramelize the onions if you want extra depth and richness!)
  • Stir in garlic and ginger and cook another minute
  • Add carrots, peppers, zucchini, and cauliflower and cook 1 minute
  • Pour in broth and bring to a gentle boil
  • Lower heat and simmer 15 to 20 minutes until vegetables are tender
  • Stir in coconut milk and simmer 2 minutes
  • Add shredded cheese if using and stir until silky
  • Season with salt, pepper, and spices
  • Finish with herbs and sesame seeds and serve warm

Variations

  • Add cooked chicken or shrimp for protein
  • A squeeze of lime at the end makes it pop – and a touch of lime zest if you’re wanting to make it extra zippy!
  • Add spinach after cooking for extra greens
  • Want thicker? Mash a few veggie pieces (this releases starches and makes it extra creamy!)
  • Like heat? Finish with red pepper flakes, chili oil or chili paste
