Beef Noodle Soup (Rich Broth, Cozy & Ready in 40 Minutes)
This beef noodle soup is rich, savory, and packed with tender beef and slurp-worthy noodles in a deeply flavorful broth. It’s cozy comfort food that tastes like it simmered all day but comes together fast!
Ingredients
- 1 tablespoon olive oil or sesame oil
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger (or ½ teaspoon ground)
- 1 lb ground beef or thinly sliced beef
- 4 cups beef broth
- 2 tablespoons soy sauce (or low sodium)
- 1 tablespoon hoisin sauce (optional but delightfully rich)
- 8 oz noodles (ramen, udon, or spaghetti)
- 1 to 2 cups spinach or bok choy
- ½ teaspoon black pepper
- Optional chili flakes for heat
- Green onions for topping
Instructions
- Heat oil in a large pot over medium heat
- Add onion and cook 2 to 3 minutes until soft (Caramelize the onions lightly if you want extra depth and richness!)
- Stir in garlic and ginger and cook another minute
- Add beef and cook until browned
- Pour in broth, soy sauce, and hoisin sauce
- Bring to a gentle boil
- Add noodles and simmer 8 to 10 minutes until tender
- Stir in greens until wilted
- Season with black pepper and chili flakes
- Finish with green onions and serve hot
