Lazy Big-Batch Butternut Squash Soup (One Pot, Endless Flavors)

This lazy butternut squash soup is a favorite style of cooking: roast, dump, blend, done. It’s a big-batch, one-pot soup made with roasted squash and finished with an immersion blender.. then customized after it’s cooked with simple garnishes like curry, chili flakes, coconut milk, or cream. Fast, flexible, and perfect for weeknights or meal prep!

Ingredients

  • 2 large butternut squash, halved lengthwise and seeds removed
  • ½ onion, chopped
  • Olive oil
  • 4 cups of broth (vegetable or chicken)
  • Sea salt, to taste
  • Black pepper, to taste
  • Garlic powder, to taste

Instructions

  • Preheat oven to 350°F.
  • Place the halved butternut squash cut-side down in a baking dish. Pour a little broth into the bottom of the dish (just enough to keep things steamy).
  • Roast for about 45 minutes, until the squash is extremely soft and collapses easily when pressed.
  • While the squash roasts, heat a drizzle of olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until soft and translucent. (Caramelize the onions if you want extra depth and richness!)
  • Scoop the roasted squash out of the skins and add it directly to the pot with the onions.
  • Pour in 4 cups of broth and bring everything to a quick boil.
  • Season with sea salt, black pepper, and garlic powder.
  • Remove from heat and let cool slightly.
