Creamy Vegetable Soup

This creamy vegetable soup is rich, cozy, and loaded with tender veggies in a silky, comforting broth. It’s hearty without being heavy, super easy, and perfect for dunking crusty bread on chilly nights!

Ingredients

  • 1 tablespoon olive oil or butter
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 1 cup potatoes, diced
  • 1 cup corn, peas, or green beans
  • 3 cups vegetable or chicken broth
  • 1 to 1½ cups freshly shredded Parmesan or mozzarella (for creamy richness)
  • Optional shortcut: ¾ cup heavy cream
  • 1 teaspoon salt (plus more to taste)
  • ½ teaspoon black pepper
  • ½ teaspoon thyme or Italian seasoning
  • Fresh herbs for topping

Instructions

  • Heat oil in a large pot over medium heat
  • Add onion and cook 2 to 3 minutes until soft and fragrant (Caramelize the onions if you want extra depth and richness!)
  • Stir in garlic, carrots, celery, potatoes, and veggies and cook another minute
  • Pour in broth and bring to a gentle boil
  • Lower heat and simmer 15 to 20 minutes until vegetables are tender
  • Reduce heat to low and stir in shredded cheese a handful at a time until melted and creamy
  • Add splashes of broth to reach your perfect soup consistency
  • (Optional shortcut: stir in heavy cream instead of cheese for faster creaminess)
  • Season with salt, pepper, and herbs
  • Finish with fresh herbs and serve warm

Variations

  • Finish with grated Parmesan, red pepper flakes or a dash of chili oil
