- 1 cup frozen spinach, thawed and drained well
- 1 cup shredded mozzarella or Swiss
- 2 tablespoons grated Parmesan
- 1 garlic clove, minced
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 egg (for egg wash)
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment.
- Squeeze the thawed spinach completely dry — you don’t want any extra moisture.
- In a bowl, mix spinach, mozzarella, Parmesan, garlic, salt, and pepper.
- Unroll the puff pastry sheet and spread the spinach mixture evenly across the surface.
- Roll it up tightly from the long end into a log.
- Slice into ½-inch pinwheels and place them on the baking sheet.
- Brush lightly with egg wash for a glossy, golden finish.
- Bake 18–22 minutes, or until puffed and lightly browned.
- Let cool slightly before serving — the cheese will be melty and perfect!
