Ingredients

  • 1–1½ lbs sirloin or tenderloin, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • Salt and black pepper
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1 teaspoon fresh thyme or parsley (plus extra for topping)

Garlic Butter Topping

  • 3 tablespoons softened butter
  • 1 garlic clove, grated
  • 1 teaspoon chopped parsley
  • Pinch of salt + pepper

Instructions

  • Pat steak pieces dry and season generously with salt and pepper.
  • Heat olive oil in a skillet over medium-high until very hot.
  • Add steak bites in a single layer and make sure there is no crowding.
  • Sear 1–2 minutes per side until browned and cooked to your liking.
  • Add butter and garlic to the pan. Toss until the butter melts and coats the steak.
  • Transfer to a platter and immediately top with small dollops of the garlic butter topping so it melts into the warm steak.
  • Sprinkle with extra herbs and serve right away.

Tips & Variations

  • Add some red pepper flakes for heat.
  • Throw some crumbled goat cheese on top for an extra flavor layer.
  • Stir a little Dijon into the garlic butter for a punchier flavor.
  • Add a splash of Worcestershire to the pan while tossing for some extra depth.
  • Swap parsley for rosemary or thyme for a winter vibe – or use them all if you want extra flavor vibes!
  • Serve with toothpicks for an easy appetizer or pile onto crostini for a New Year’s Eve party.
  • For extra richness, finish with a quick drizzle of balsamic glaze (sounds weird…tastes amazing;)
  • Keeping with the theme of The Impatient Kitchen’s obsession.. Drizzle with browned butter for an extra rich finish! 😉
