Savory Butternut Squash Soup (Fast, Easy & Healthy!)
This butternut squash soup is velvety, savory, and surprisingly quick — the kind of cozy bowl you can blend together on a busy weeknight. It’s simple, comforting, and naturally healthy without sacrificing flavor!
Ingredients
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 medium butternut squash, peeled and cubed (about 4 cups)
- 1 medium carrot, sliced
- 1 medium apple, peeled and chopped (adds natural sweetness)
- 3 cups vegetable or chicken broth
- ½ tsp salt (adjust to taste)
- ¼ tsp black pepper
- ¼ tsp ground nutmeg
- ¼ tsp smoked paprika
- ½ cup coconut milk or heavy cream
- Optional toppings: toasted pumpkin seeds, swirl of coconut milk, drizzle of olive oil, chopped herbs, red pepper flakes.
Instructions
- Heat the olive oil and butter in a pot over medium heat.
- Add the onion and cook until softened. (Caramelize the onions if you want extra depth and richness!)
- Stir in the garlic.
- Add the squash, carrot, and apple and cook for a few minutes.
- Pour in the broth, add salt, pepper, nutmeg, and smoked paprika.
- Bring to a boil, then reduce heat and simmer about 20 minutes until everything is soft.

- Stir in the coconut milk or heavy cream. Taste and adjust seasoning.
- Serve warm with your favorite toppings and finish with a sprinkle of buttered bread crumbs for extra richness, flavor, and the perfect crispy texture!
