Lemon Parmesan Asparagus (Easy 15-Minute Side Dish!)

Asparagus is one of those vegetables that really doesn’t need much help. Give it some garlic, freshly grated Parmesan and a squeeze of lemon, roast it until the tips get a little crispy, and suddenly the green thing on the plate is getting considerably more attention than expected. 😉

This Lemon Parmesan Asparagus takes about 15 minutes, uses one pan and works with pretty much any dinner. Fast, fresh and absolutely no need to boil a vegetable into submission first!

Ingredients

  • 1 1/2 lbs fresh asparagus
  • 1 1/2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup freshly grated Parmesan cheese
  • 1 lemon
  • Freshly ground sea salt, for finishing

Instructions

  • Preheat the oven to 425°F and line a large baking sheet with parchment paper or foil.
  • Trim the woody ends from the asparagus and pat the spears dry.
  • Arrange the asparagus on the baking sheet and drizzle with olive oil.
  • Add the garlic, kosher salt and black pepper, then toss until everything is evenly coated.
  • Spread the asparagus into a single layer. Vegetables need personal space too, particularly when crispy edges are involved.
  • Sprinkle about half of the Parmesan over the asparagus.
  • Roast for 8–12 minutes, depending on the thickness of the spears, until the asparagus is tender and the tips are starting to brown.
  • Squeeze fresh lemon juice over the hot asparagus and add the remaining Parmesan.
  • Finish with a few cracks of freshly ground sea salt and a little lemon zest if you’re feeling ambitious.
  • Serve immediately while the Parmesan is melty and the tips still have that fabulous little crispiness happening.

Variations

  • Don’t overcook it. Asparagus should be tender but still have some bite. Limp olive-green spears are how asparagus got a bad reputation in the first place.
  • Thickness matters. Skinny asparagus may only need 7–8 minutes. Big sturdy spears can take 10–12. Start checking early because asparagus can go from fabulous to exhausted surprisingly quickly.
  • Freshly grated Parmesan wins again. It melts better, tastes better and we already bought the cheese grater, so we may as well continue justifying its existence.
  • Pat the asparagus dry. Extra water creates steam, and steam is not invited to our crispy-tip situation.
  • Add the lemon after roasting. Fresh lemon juice stays bright and punchy instead of disappearing in the oven.
  • Make it spicy. Add a pinch of red pepper flakes before roasting.
  • Add balsamic. A light drizzle of balsamic glaze at the end is fabulous with Parmesan.
  • Try the grill. Toss the asparagus with the oil and seasonings and grill over medium-high heat until lightly charred, then finish with Parmesan and lemon. This also happens to match our gorgeous photo particularly well.
