Lentil Salad with Creamy Tahini Dressing
A refreshing lentil salad featuring hearty lentils and crisp vegetables, all tossed in a creamy Tahini dressing for a satisfying and flavorful dish.
Recipe
Salad Ingredients:
- 1 cucumber
- ½ onion
- 2 cups of tomatoes
- ½ bunch of fresh parsley
- 1.5 cup of cooked lentils
Creamy Tahini Dressing Ingredients:
- ÂĽ cup extra-virgin olive oil
- ÂĽ cup Tahini
- 2 tablespoons lemon juice
- Lemon zest
- 2 teaspoons Dijon mustard
- 2 teaspoons honey
- ½ teaspoon sea salt
- Freshly ground black pepper, to taste
- 2 tablespoons ice-cold water (add more as needed, the ice is what makes the dressing creamy)
Salad Instructions:
- Chop and mix cucumber, onion, tomato, parsley with cooked lentils
Dressing instructions:
- Mix olive oil, tahini, lemon juice, lemon zest, mustard, honey, pepper and salt.
- Add the ICE COLD water (this icy temperature will make it the dressing creamy!), and mix it up again.
- Add more lemon juice or zest and pepper if needed
- If the dressing is too thick to drizzle or becomes too think after refrigerating, whisk in more icy water ~ 1 tablespoon at a time.
- Experiment with add-ins such as red pepper flakes, cayenne pepper, lime zest, garbanzo beans, snap peas, etc..!
