Crispy Smashed Potatoes (Garlic Butter & Roasted Lemon)

Golden, crackly edges. Buttery centers. Punchy garlic. Bright roasted lemon. These smashed potatoes are the side dish that quietly steals attention from everything else on the plate! 😉

Ingredients

  • 1.5 lbs baby potatoes (yellow or mixed)
  • 3 tbsp olive oil
  • Salt
  • Black pepper

Garlic Butter Ingredients

  • 3 tbsp butter, melted
  • 2–3 garlic cloves, finely minced
  • 1 tsp fresh thyme leaves (or rosemary)

Finishing Ingredients

  • ½ lemon, roasted or fresh
  • Flaky salt
  • Extra herbs (optional)

Instructions

  • Preheat oven to 425°F / 220°C. Line a sheet pan with parchment.
  • Boil potatoes in well-salted water until fork-tender (about 15–20 minutes). Drain and let steam dry (this helps crisping).
  • Spread potatoes on the pan. Gently smash each with the bottom of a glass (not obliterated… just flattened a bit;).
  • Drizzle with olive oil and season with salt and pepper. (make sure they are well coated in oil for maximum crisp!)
  • Roast 20–30 minutes until deeply golden and crisp on the edges.
  • Make the garlic butter
  • Stir melted butter, garlic, and herbs.

Finishing Touches!

  • Brush or drizzle garlic butter over hot potatoes.
  • Squeeze roasted lemon over the top (or fresh lemon if skipping roasting).
  • Add flaky salt and extra herbs if you’re feeling fancy!

Variations

  • Extra crispy: Flip halfway through roasting, and you can also broil for a minute or two at the very end. (But watch them carefully as they go from “golden” to “scorched” in seconds;)
  • Cheesy: Sprinkle fresh grated Parmesan right after smashing, before roasting. (Here is why you should never use pre-shredded cheese!)
  • Spicy: Add chili flakes to the butter.
  • Ultra-lemony: Roast lemon halves alongside potatoes for deeper flavor and if you really want some extra zip, add some lemon zest!
  • Butter Alternative: Use olive oil + garlic + lemon zest.
