Hearty Greek Bean Soup (Fasolada-Style)
This classic Greek bean soup is hearty, comforting, and naturally protein-rich. Made with white beans, vegetables, and olive oil, it’s cozy, filling, and even better the next day!
Ingredients
- 1 pound dried white beans (or 3 cans, drained)
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic
- 1 can crushed tomatoes
- 5–6 cups vegetable broth
- ¼ cup olive oil
- Salt and pepper
- Optional: bay leaf or oregano
Instructions
- Sauté onion, carrots, and celery in olive oil (Caramelize the onions first if you want extra depth and richness!)
- Add garlic and tomatoes
- Add beans and broth
- Simmer until beans are tender and soup thickens
- Season generously and finish with more olive oil
Variations
- Finish with grated Parmesan, red pepper flakes or a dash of chili oil
