Hearty Greek Bean Soup (Fasolada-Style)

This classic Greek bean soup is hearty, comforting, and naturally protein-rich. Made with white beans, vegetables, and olive oil, it’s cozy, filling, and even better the next day!

Ingredients

  • 1 pound dried white beans (or 3 cans, drained)
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic
  • 1 can crushed tomatoes
  • 5–6 cups vegetable broth
  • ¼ cup olive oil
  • Salt and pepper
  • Optional: bay leaf or oregano
