High Protein Cottage Cheese Alfredo Sauce
This cottage cheese Alfredo sauce is rich, creamy, and packed with protein. A twist on classic Alfredo sauce made without heavy cream and ready in minutes!
Ingredients
- 1 cup cottage cheese
- ½ cup finely grated parmesan cheese
- 2–3 cloves garlic
- 2 tbsp butter
- Splash of milk (as needed for blending)
- Salt
- Black pepper
- Optional: red pepper flakes for a touch of heat!
Instructions
- Melt butter in a skillet over medium-low heat
- Mince garlic and add to the butter
- Cook just until fragrant (about 30 seconds – make sure not to brown)
- In a blender, combine:
- Cottage cheese
- Parmesan
- Small splash of milk
- Blend until completely smooth and silky
- Pour sauce into the skillet
- Keep heat LOW
- Stir gently until warmed through
- Season with salt and pepper to taste
- Toss immediately with hot pasta
Variations
- Too thick? Add a splash of milk.
- Too thin? Simmer gently to thicken up.
