Lemon Feta Crunch Salad
This lemon chickpea feta salad recipe video shows how to mix hearty chickpeas, crisp cucumber, sweet onion, and juicy cherry tomatoes with tangy feta, fresh parsley, and a bright lemon-honey dressing—fresh, flavorful, and effortlessly delicious!
Recipe
Ingredients:
- 2 (15 oz) cans of Garbanzo beans
- 1/2 English cucumber
- 1/2 sweet onion
- 1 container of cherry tomatoes
- 1/3 cup chopped parsley
- 8 oz Feta cheese
- Zest of one lemon
- Juice of one lemon
- 1 tbsp of honey
- Sea salt, pepper, Za’atar seasoning & red pepper flakes to taste
Instructions:
- Rinse and dry the Garbanzo beans
- Dice the cucumber and onion
- Chop the parsley
- Cut the cherry tomatoes in half
- Zest and juice the lemon
- Combine all the above ingredients with the olive oil, Feta & seasonings
- Mix and enjoy!
