Lemony Vegetable Broth Soup with Greens

This bright, brothy vegetable soup is light, fresh, and deeply satisfying. Packed with vegetables, finished with lemon, and perfect when you want something nourishing but not heavy!

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic
  • 5–6 cups vegetable broth
  • 2 cups of sweet corn
  • 1 zucchini, chopped
  • 2 cups leafy greens (spinach, kale, or chard)
  • Juice of ½–1 lemon
  • Salt and pepper

Instructions

  • Sauté onion, carrots, and celery until softened (Caramelize the onions first if you want extra depth and richness!)
  • Add garlic and cook briefly
  • Pour in broth and simmer 15 minutes
  • Add zucchini, corn and greens, cook until tender
  • Finish with lemon juice and seasoning – add some lemon zest in if you want it extra zippy and bright!

Variations

  • Add white beans for extra protein and texture
  • Finish with grated Parmesan, red pepper flakes or a dash of chili oil
  • Throw in some dill or parsley for freshness
