Creamy Roasted Cauliflower Soup (Immersion Blender)

Ingredients

• 1 large head cauliflower, cut into florets
• 1 small onion, chopped
• 4 cloves garlic
• 3–4 cups vegetable or chicken broth
• 2 tablespoons olive oil
• Salt and pepper, to taste
• Optional: splash of cream or half-and-half

Instructions

• Roast cauliflower and garlic with olive oil, salt, and pepper at 400°F until deeply golden
• Sauté onion in a soup pot until soft
• Add roasted cauliflower and broth
• Simmer 10 minutes
• Remove the pot from heat and use an immersion blender to blend until smooth and creamy. (This is The Impatient Kitchen’s FAVORITE immersion blender!)
• Finish with cream if desired and adjust seasoning

Variations

• Add white pepper or nutmeg for warmth, or some red pepper flakes if you like spice
• Finish with a sprinkle of buttered bread crumbs for extra richness, flavor, and the perfect crispy texture!
• Finish with fresh herbs or chili oil to bump up the fancy layered flavor levels
• This soup is also a great base for cheese or curry flavors
