Lazy Lentil Soup (Immersion Blender, Cozy & One-Pot!)

This lazy lentil soup is hearty, comforting, and incredibly easy to make! Everything cooks in one pot, gets partially blended with an immersion blender for the perfect texture, and turns into a cozy, satisfying soup with almost no effort. It’s simple, flexible, and exactly the kind of dinner that works on busy days!

Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 1 cup dried brown or green lentils, rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups broth (vegetable or chicken)
  • ½ tsp kosher salt, plus more to taste
  • ÂĽ tsp black pepper
  • ½ tsp cumin (optional but lovely)
  • ½ tsp smoked paprika (optional)
  • 1 bay leaf (optional)
  • Juice of ½ lemon (optional, to finish)

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add the onion and carrots and cook for 6–8 minutes, until softened and lightly golden. (Caramelize the onions first if you want extra depth and richness!)
  • Stir in the garlic and cook for about 30 seconds, just until fragrant.
  • Add the lentils, diced tomatoes, broth, salt, pepper, spices, and bay leaf if using.
  • Bring to a boil, then reduce heat and simmer uncovered for 30–35 minutes, until the lentils are soft and tender.
  • Remove the bay leaf. Use an immersion blender to blend the soup briefly – just enough to thicken it while still leaving some texture. (This is The Impatient Kitchen’s FAVORITE immersion blender!)
  • Stir in lemon juice if using, taste, and adjust seasoning.
  • Serve warm and cozy!

  • Blend more for a creamier soup, or less if you like it chunky — this one’s very forgiving.
  • This soup thickens as it sits; add a splash of broth or water when reheating if needed.
  • Freezes beautifully and reheats like a dream!
