Chicken and Potatoes Sheet Pan Dinner (Easy One-Pan Dinner)
Golden roasted chicken, crispy-edged potatoes, and big cozy flavor all on one pan. Minimal prep, minimal cleanup, maximum weeknight happiness!
Ingredients
- 1½ – 2 lbs chicken thighs or breasts (chicken thighs are our personal favorite for this dish)
- 1½ – 2 lbs potatoes, chopped
- 2–3 tablespoons olive oil
- Salt
- Black pepper
- Garlic powder
- Paprika
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Cut potatoes into evenly sized pieces so they roast beautifully.
- Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika.
- Spread onto the pan, giving them a little space.
- Season the chicken with olive oil, salt, pepper, garlic powder, and paprika.
- Nestle the chicken onto the pan among the potatoes.
- Roast for 25–35 minutes until chicken is golden and potatoes are crispy and tender.
- Let everything rest briefly before serving so the juices settle.
Variations
- Spacing keeps everything roasting instead of steaming
- Add onions or carrots for extra flavor and color
- Finish with lemon, pomegranate seeds or fresh herbs for brightness
- Chicken thighs stay extra juicy and forgiving for this dish
- Drizzle with browned butter if you want some extra WTF richness! 😉
