Creamy Tomato Soup with an Immersion Blender (Easy, Cozy & One-Pot!)
This creamy tomato soup is smooth, comforting, and wonderfully easy to make! Everything cooks in one pot, gets blended right in the pot with an immersion blender, and turns rich and silky without a lot of effort. It’s cozy, familiar, and perfect for busy nights when you still want something homemade and comforting!
Ingredients
- 2 tbsp olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 (28 oz) cans whole peeled tomatoes, with juices
- 2 cups broth (vegetable or chicken)
- ½ tsp kosher salt, plus more to taste
- ÂĽ tsp black pepper
- ½ tsp sugar or honey (optional, to balance acidity)
- ½ tsp dried basil or thyme (optional)
- ½ cup half-and-half or heavy cream (optional, for extra creaminess)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and cook until soft and translucent, about 6–8 minutes.
- Stir in the garlic and tomato paste and cook for about 1 minute, until fragrant and slightly caramelized. (Caramelize the onions 100% if you want extra depth and richness!)
- Add the canned tomatoes (gently breaking them up with a spoon), broth, salt, pepper, sugar, and dried herbs if using.
- Bring the soup to a gentle boil, then reduce heat and simmer uncovered for 20–25 minutes so the flavors fully develop.
- Remove the pot from heat and use an immersion blender to blend the soup until smooth and creamy. (This is The Impatient Kitchen’s FAVORITE immersion blender!)
- Stir in the cream or half-and-half if using, then taste and adjust seasoning as needed.
- Serve warm with toasty bread!
Variations
- This tomato soup becomes naturally creamy once blended, but you can easily thin it with extra broth if needed.
- Finish with a sprinkle of buttered bread crumbs for extra richness, flavor, and the perfect crispy texture!
- If you want to jazz up the richness, add 1/4-1/2 cup of dry red wine while sauteing the onions
- If the soup tastes sharp, a small splash of cream or a touch more honey or sugar to balance the acidity.
- Letting the soup simmer a little longer before blending creates deeper, richer flavor.
- This soup freezes well without the cream; add dairy after reheating.
