One-Pot Golden Chicken & Silky Rice

Juicy golden chicken, silky rice, and a sauce that packs amazing flavor — all in one pan. This recipe is bold, cozy, and anything but basic! It’s the kind of dinner that tastes like you fussed… but took you less than 30 minutes. Recipe below!

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • Sea salt & black pepper
  • 2 tbsp olive oil 
  • 1 medium onion, diced
  • 2 bell peppers (any color), sliced
  • 2 jalapeños, chopped
  • 3 garlic cloves, minced or grated
  • 1 tsp ground cumin
  • 1 (3-inch) cinnamon stick, broken in half
  • 1 (15 oz) can black beans, rinsed
  • ⅓ lb cherry or grape tomatoes, halved
  • 1 cup basmati rice, rinsed
  • 2½ cups chicken stock
  • 3 tbsp fresh cilantro, chopped
  • 1 small container of sour cream
  • 2 limes, quartered

Instructions

  • Sear the chicken: Season chicken thighs generously with salt and pepper. Heat oil in a large oven-safe skillet over medium-high heat. Sear chicken skin-side down until golden and crisp, about 5 minutes per side. Remove and set aside.
  • Build the flavor base: In the same pan, add onion, bell peppers, chiles, cinnamon stick, and a pinch of salt and pepper. Cook until softened, about 5 minutes. Stir in garlic and cumin and cook for another 30 seconds — just until your kitchen smells amazing.;)
  • Add everything else: Stir in rice, black beans, and tomatoes. Pour in the chicken stock and bring it all to a simmer.
  • Bake it all together: Nestle the seared chicken thighs right on top and transfer the whole skillet to a preheated 375°F oven and bake 25–30 minutes, until the chicken is cooked through and the rice is fluffy and tender.
  • Finish strong: Sprinkle with chopped cilantro, chopped jalapeno, a squeeze of lime & some sour cream and serve straight from the pan.

Tips

  • Feel free to swap in your other favorite types of rice
  • For extra heat, leave the jalapeno seeds in 😉
