Crispy Oven Baked Boneless Chicken Thighs (Buttery Cornflake Crust)
These Crispy Oven Baked Boneless Chicken Thighs have a delightfully golden, crunchy Cornflake crust and a juicy, tender center. Awesome flavor, minimal effort, and that perfect crispy edge everyone loves!
Ingredients
- 1½ – 2 lbs boneless chicken thighs
- 1 tablespoon olive oil
- Salt
- Black pepper
- Garlic powder
- Paprika
- 1½ cups cornflakes, crushed
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Give the cornflakes a gentle crush. (You want crumbs with texture, not dust.)
- Stir the crushed flakes with melted butter until lightly coated.
- Pat the chicken thighs as dry as possible so they can crisp up perfectly.
- Season with salt, pepper, garlic powder, and paprika.
- Brush lightly with olive oil.
- Press each thigh into the cornflake mixture, coating both sides.
- Arrange on the baking sheet with a little breathing room so the oven sauna can do it’s thing
- Bake for 20–25 minutes until golden, crispy, and cooked through.
- Let them rest a few minutes before serving so everything can settle together
Variations
- Don’t skip drying the chicken…moisture is the arch nemesis of crispiness.
- Crush the cornflakes gently – you want pebbles not sand or you’ll miss out on that epic crunch!
- If your crust isn’t as golden as you’d like, a quick 1–2 minute broil works wonders. (But watch it closely…and yes, we learned that the hard way;)
- Add a little grated Parmesan to the crumbs for extra savory richness.
- A pinch of cayenne or chili flakes gives these a subtle, sneaky heat.
- These are ridiculously good with dips. (Ranch, honey mustard, spicy aioli… choose your adventure!;)
- Leftovers? Reheat in the oven or air fryer to bring the crispiness back to life.
