Banana Cream Poke Cake Recipe
This Banana Cream Poke Cake is cool, creamy, and ridiculously easy. Fluffy yellow cake soaked with banana pudding, finished with a silky vanilla frosting and a classic Nilla wafer crunch. It’s nostalgic, low-effort, and even better the next day.
Ingredients
- 1 box yellow cake mix (plus eggs, oil, and water per box instructions)
- 1 package instant banana pudding mix
- Milk (amount listed on pudding package)
- 1 can vanilla frosting
- 6–8 Nilla wafers, rough chopped
Instructions
- Bake the yellow cake according to package directions in a 9×13 pan.
- Let the cake cool until about 50–60% cooled, you want it still warm, but set.
- Whisk the banana pudding with milk until smooth.
- Use the handle of a wooden spoon or a skewer to poke lots of holes all over the cake.
- Slowly pour the pudding over the cake, letting it soak into the holes.
- Refrigerate until the pudding is fully set.
- Microwave the vanilla frosting for about 20 seconds, just until pourable.
- Pour the frosting over the chilled cake and gently spread if needed.
- Sprinkle crushed Nilla wafers evenly over the top.
- Refrigerate overnight for best flavor and texture. (Check out this article to find out why layered desserts are better the next day!)
Tips & Variations
- Optional bananas: Add freshly diced banana on top right before serving for extra banana flavor. (right before serving so they don’t start turning brown)
- For best texture, add banana slices to individual servings, not to the whole cake.
- Want more crunch? Add extra Nilla wafers just before serving!
- This cake is even better on day two..;)
