Lentil Salad with Creamy Tahini Dressing

A refreshing lentil salad featuring hearty lentils and crisp vegetables, all tossed in a creamy Tahini dressing for a satisfying and flavorful dish.

Recipe

Salad Ingredients: 

  • 1 cucumber
  • ½ onion
  • 2 cups of tomatoes
  • ½ bunch of fresh parsley
  • 1.5 cup of cooked lentils

Creamy Tahini Dressing Ingredients: 

  • ¼ cup extra-virgin olive oil
  • ¼ cup Tahini
  • 2 tablespoons lemon juice
  • Lemon zest
  • 2 teaspoons Dijon mustard
  • 2 teaspoons honey
  • ½ teaspoon sea salt
  • Freshly ground black pepper, to taste
  • 2 tablespoons ice-cold water (add more as needed, the ice is what makes the dressing creamy)

Salad Instructions: 

  • Chop and mix cucumber, onion, tomato, parsley with cooked lentils

Dressing instructions:

  • Mix olive oil, tahini, lemon juice, lemon zest, mustard, honey, pepper and salt. 
  • Add the ICE COLD water (this icy temperature will make it the dressing creamy!), and mix it up again. 
  • Add more lemon juice or zest and pepper if needed
  • If the dressing is too thick to drizzle or becomes too think after refrigerating, whisk in more icy water ~ 1 tablespoon at a time.
  • Experiment with add-ins such as red pepper flakes, cayenne pepper, lime zest, garbanzo beans, snap peas, etc..!
