Avocado Feta Crunch Salad

Ingredients:
- 2 tomatoes
- 1 cucumber
- 1 onion
- 1 green pepper
- 2 ripe avocados
- 2 lemons
- 2 limes
- 10 ounces fresh or thawed frozen corn
- 1 cup chopped parsley
- 10 ounces crumbled feta (in brine is best)
- 3 tbs olive oil
- Fresh or dried oregano, sea salt, black pepper, cumin, Za’atar to taste
Instructions:
- Chop all vegetables and mix together
- Juice the lemons and limes over the vegetables
- Add seasonings, chopped parsley, olive oil and feta
- Garnish with parsley before serving
Tip: While this is amazing as a side salad, this is also epic stuffed into a warm pita and served as a vegetarian sandwich!
