- 3 cups chicken broth
- ¼ cup soy sauce (or low sodium)
- 1 tablespoon hoisin sauce (optional but delicious)
- 1 teaspoon ginger (fresh or ground)
- 1 to 1½ cups freshly shredded mozzarella or Parmesan (for creamy richness if desired)

Instructions
- Heat oil in a large pot over medium heat
