Pumpkin Chia Pudding
Creamy, cozy, and done in five minutes flat (the fridge does the rest)! This Pumpkin Chia Pudding is the ultimate fall hack—creamy, cozy, and ridiculously easy. With pumpkin purée, warm spices, and a drizzle of maple syrup or honey, it’s basically pumpkin pie in a jar, minus the baking. Perfect for breakfast, dessert, or meal prep.
Ingredients
- 1 cup milk (dairy or non-dairy)
- ½ cup canned pumpkin purée
- 3 tablespoons chia seeds
- 2 tablespoons maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice (or cinnamon + nutmeg + ginger)
- Pinch of salt
Instructions
- In a medium bowl or jar, whisk together milk, pumpkin, maple syrup, vanilla, pumpkin pie spice, and salt until smooth.
- Stir in chia seeds, making sure they don’t clump.
- Cover and refrigerate at least 2 hours (overnight is best).
- Stir before serving. Top with whipped cream, granola, toasted pecans or toffee bits if you’re feeling fancy 😉
