For the crust:

- 1 tbsp lemon juice
- 1 cup heavy whipping cream

Instructions
- In a bowl, mix graham cracker crumbs, melted butter, and sugar until it looks like wet sand.
- Press firmly into the bottom of a springform pan (use the bottom of a glass to really pack it in).
- Chill in the fridge while you make the filling.
- In a large bowl, beat the cream cheese until completely smooth (no lumps: this is key for that silky texture).
- Add powdered sugar, vanilla, and lemon juice. Mix until creamy and combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy (don’t rush this – keep it light).
- Spread the filling over the chilled crust and smooth the top.
- Cover and refrigerate for at least 6 hours, preferably overnight (this is when the magic happens).
