Marshmallow Crunch Brownies
Decadent brownies with a fudgy brownie base, topped with gooey baked marshmallows and a rich peanut butter-chocolate topping.
Recipe
Ingredients:
- Brownie box mix
- Oil/water/eggs as box recipe calls for (substitute coffee for water for extra rich flavor)
- Topping Ingredients:
- 1 bag of mini marshmallows
- 1 and 1/4 cups smooth peanut butter
- 2 cups chocolate chips
- 5 tablespoons butter
- 3 cups Rice Krispies cereal
Instructions:
- Bake brownies following box instructions but remove from oven 9 minutes early
- Cover the brownies in the bag of mini marshmallows
- Bake for the remaining 9 minutes or until marshmallows are slightly golden brown
- Let brownies cool completely
- Mix peanut butter and chocolate chips and microwave in 30 second increments until melted
- Stir the melted chocolate chips and peanut butter together and fold in the Rice Krispies cereal
- Spread the mixture on top of the brownies
Tip: For a more gooey texture, serve the brownies at room temperature. For some extra crunch, serve after refrigeration.
