Gooey S’mores Brownies

These Gooey S’mores Brownies start with rich, chewy brownie layers and get even better with golden graham crackers, melty chocolate chips, and perfectly toasted marshmallows on top. It’s your favorite brownie… leveled up with all the magic of s’mores. Recipe and video included!

Recipe

Ingredients:

  • Box Brownie Mix (and corresponding ingredients) Note: use coffee instead of water for a richer flavor
  • Graham crackers
  • 1 bag of Mini-Marshmallows
  • Chocolate chips to taste (I used ~2 cups)

Instructions:

  • Layer a pan with graham crackers
  • Pour slightly chilled brownie batter on top of the graham crackers (a slight chill to the batter helps keep it from absorbing into the graham crackers before baking)
  • Bake according to the box instructions but remove ~8 minutes early (10 if you prefer more gooey brownies)
  • Pour marshmallows on top
  • Finish baking for 8 minutes 
  • Let cool for 5 minutes and top with a sprinkle of chocolate chips and a few chopped or crumbled graham crackers
  • Allow them to cool for a few minutes before eating
  • Enjoy the warm, gooey deliciousness! 

Tips:

  • If you prefer super gooey brownies, you can skip the layer of graham crackers on the bottom of the pan and just use them on top of the marshmallows
  • Use a 9×13 pan for thinner brownies, and a smaller pan for thicker
