Soft Dinner Roles (No Knead, No Bread Maker)
These soft dinner rolls are fluffy, tender, and unbelievably easy — no kneading, no breadmaker, just a simple dough that rises into warm, pull-apart perfection. The video shows you how to mix, rise, shape, and bake for soft, golden rolls every time!
Ingredients
- 3 cups all-purpose flour
- 2 tbsp sugar
- 1 tsp fine salt
- 2 ¼ tsp instant yeast (one packet)
- 1 cup warm milk (110°F)
- 3 tbsp melted butter
- 1 large egg
- Optional: extra melted butter for brushing
Instructions
- In a large bowl, whisk flour, sugar, salt, and instant yeast.
- In a separate bowl, mix the warm milk, melted butter, and egg until smooth.
- Pour the wet ingredients into the dry and stir with a spatula until the dough comes together. It should look sticky — that’s perfect for no-knead rolls.
- Cover the bowl and let the dough rise in a warm spot for about one hour, or until doubled.
- Lightly flour your hands and divide the dough into 12 pieces. Roll each piece into a smooth ball and place on a greased or parchment-lined baking sheet.
- Cover and let rise again for 25–30 minutes.
- Preheat oven to 375°F.
- Bake for 14–17 minutes, until lightly golden on top.
- Brush warm rolls with melted butter for the softest finish.
Tips & Variations
Honey Butter Rolls:
Brush the rolls with a mixture of melted butter and honey right after baking. It gives them a glossy, lightly sweet finish.
Garlic Herb Rolls:
Add garlic powder and Italian seasoning to the dough, then brush the tops with garlic butter as soon as they come out of the oven.
Buttermilk Rolls:
Swap the warm milk for warm buttermilk for extra tenderness and a subtle tang.
Potato Soft Rolls:
Replace ¼ cup of the flour with ¼ cup cooked mashed potato to make the rolls even softer and stay fresh longer.
Extra-Soft Pull-Apart Cluster:
Place the dough balls touching in a round or square baking dish and bake as a cluster for extra-steamy, extra-pillowy rolls.
