Tzatziki Chicken Salad

Tzatziki Chicken Salad is cool, creamy, and loaded with fresh Mediterranean flavor. Juicy shredded chicken gets tossed with crisp cucumbers, tangy Greek yogurt, garlic, lemon, and plenty of dill—aka everything you love about tzatziki sauce in hearty salad form. The result? A refreshing, protein-packed dish that’s just as perfect piled on pita as it is scooped up with crackers. Recipe and video included below!

Recipe

Ingredients:

  • 6 cooked seasoned chicken thighs (rough chopped)
  • 1 cup of plain full fat greek yogurt
  • ½ cup sliced onion
  • 1 english cucumber, shredded and drained
  • 6 tablespoons chopped fresh dill
  • 1 tablespoon chopped fresh mint
  • 1 ½ tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 clove of garlic, minced
  • Salt, pepper and red pepper flakes to taste

Instructions:

  • Add the shredded cucumber to a colander and use a paper towel to squeeze the excess moisture out.
  • Add the yogurt, cucumber, mint, dill, lemon juice, olive oil, garlic, salt, pepper and red pepper flakes to a large bowl and mix. Add in the chicken and mix until coated.

Tips:

  • This chicken salad is fantastic alone, but is also wonderful stuffed inside a warm pita or used as a dip for crostini or pita chips!
  • If you have the time, let it sit for ~1 hour before eating so all of the amazing flavors can blend.
