Pumpkin Hummus
Pumpkin Hummus is creamy, savory, and the ultimate unexpected fall appetizer. Blending pumpkin purée with chickpeas, garlic, and tahini makes a dip that’s smooth, spiced, and just unique enough to impress. Ingredients
- 1 (15-ounce) can chickpeas, drained and rinsed
- ½ cup pumpkin purée
- 2 tablespoons tahini
- 2 tablespoons olive oil (plus more for drizzling)
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 1 teaspoon cumin
- ½ teaspoon smoked paprika (plus more for garnish)
- Salt, to taste
Instructions
- Add chickpeas, pumpkin, tahini, olive oil, lemon juice, garlic, cumin, and paprika to a food processor or blender.
- Blend until smooth, adding 1–2 tablespoons water if needed to thin.
- As always, taste and adjust seasoning with more salt, lemon, or spice as needed.
- Transfer to a bowl, drizzle with olive oil, and sprinkle the top with your favorite spice or garnish! (Some favorites for this dish: Chili powder, crushed Pastacios, Curry powder, Za’atar, Red Pepper Flakes, Cinnamon/Nutmeg/Cardamom, or Everything Bagel Seasoning!)
