5-Ingredient Pumpkin Curry Soup

Ingredients
- 1 (15-ounce) can pumpkin purée
- 1 (14-ounce) can coconut milk (full fat for creamier, light for lighter)
- 2 tablespoons red curry paste (adjust to taste)
- 2 cups vegetable or chicken broth
- 2 cloves garlic, minced
Instructions
- In a pot over medium heat, sauté garlic in a splash of oil until fragrant (about 30 seconds).
- Stir in curry paste and cook 1 minute to release flavor.
- Add pumpkin purée, coconut milk, and broth. Stir until smooth.
- Bring to a simmer and cook 10–15 minutes, stirring occasionally.
- As always, taste and adjust seasoning as you go—add salt, pepper, or extra curry paste if desired.
