Pumpkin Spice Espresso Shake

Pumpkin Spice Espresso Shake is your shortcut to fall coffeehouse vibes at home. Just blend cold brew (or espresso), pumpkin purée, and vanilla ice cream with a hit of pumpkin spice, then finish with whipped cream. The result? A creamy, spiced shake that’s part dessert, part caffeine boost, and way better than Starbucks. Recipe below!

Ingredients

  • 1 cup cold brew coffee or 2 shots espresso, chilled
  • ½ cup pumpkin purée
  • 2 cups vanilla ice cream (or Greek yogurt for lighter version)
  • 1 teaspoon pumpkin pie spice
  • Whipped cream, for topping

Instructions

  1. Add cold brew, pumpkin, ice cream (or yogurt), and pumpkin spice to a blender.
  2. Blend until smooth and creamy.
  3. Pour into glasses, top with whipped cream, and sprinkle with extra pumpkin spice.

Tips

  • Pump up the spice: Add cinnamon or nutmeg if you like it extra cozy, or some Cardamom to give an amazing boost to the flavor profile.
  • Make it boozy: A splash of coffee liqueur or rum turns this into a cozy fall cocktail.
  • Dairy-free option: Use coconut milk ice cream or almond milk yogurt.
