Gooey Lemon Bars
Gooey Lemon Bars bring zesty citrus and sweet creaminess together in one irresistible bite. They start with an easy lemon cake mix base, get layered with creamy condensed milk, pops of white chocolate, and a buttery crumble topping. The result? A chewy, tangy, perfectly gooey treat that tastes like summer in a pan. Recipe and video included!
Recipe
Ingredients:
- One box of lemon cake mix
- 1 stick of butter
- 1 lemon
- White chocolate chips to taste
- 1 egg
- 1 (14 oz) can of sweetened condensed milk
Instructions:
- Mix the cake mix, egg, ½ cup of lemon juice and butter together until dough is sticky
- Press just over half of the dough on the bottom of a greased pan, pushing the edges up just a bit to create a small ridge along the edges
- Sprinkle in white chocolate chips to taste
- Grate in the zest of half a lemon (or more if you like it zippy!)
- Drizzle ~½ of the can of sweet and condensed milk on top of the filling
- Crumble chunks of the remaining dough across the top and gently press down a bit (the dough will not cover the entire top)
- Bake at 325 degrees for about 25 minutes (be careful not to over-bake or it will dry out the gooey center) Start checking them at about 22 minutes – if the top and edges look a little golden but the center is still slightly soft, pull it. They’ll firm up a touch as they cool. The key cue will be visual: If they look “done” all over, they’ve probably gone a bit too far.
Tips:
- If you prefer super gooey brownies, you can skip the layer of graham crackers on the bottom of the pan and just use them on top of the marshmallows
- Use a 9×13 pan for thinner brownies, and a smaller pan for thicker
