Easy Greek Salad with Chicken
This Mediterranean Chopped Chicken Salad is a fresh, flavorful meal that comes together fast and satisfies every craving—crunchy veggies, juicy chicken, briny olives, and creamy feta, all tossed in a bold vinaigrette. It’s protein-packed, perfect for lunch or dinner, and easy to customize with whatever crisp veggies you’ve got on hand!

Ingredients
- 1 cucumber
- 2 tomatoes
- 3-4 cooked chicken thighs (try this Lemon and Greek Yogurt Chicken Marinade for the juiciest, most flavorful chicken!)
- Handful of Kalamata olives
- Handful of Pepperoncini
- Feta cheese
- Dressing (you can either use your favorite store bought, or make your own using this classic Green Red Wine Vinaigrette recipe)
Instructions:
- Chop it all up
- Mix it all up
- Top with Feta
- Drizzle the dressing
- Enjoy!
Tips:
- If you’re not going to eat all the salad at once, keep the dressing on the side so the salad will last longer
- This salad is fantastic for a high-protein entree by itself, and if you need a little something extra, it is also wonderful stuffed inside of a warm Pita!
- Throw in any other crisp and juicy veggies that you have laying around (onion, corn, avocado, green pepper, etc..)
- A handful of Garbanzo or Navy beans are also delicious in this mixture
