Salad Ingredients
- 6 cups chopped lettuce (romaine or a crisp mix)
- Sliced tomatoes
- Sliced cucumbers
- Kalamata olives
- Crumbled feta cheese
- Pepperoncini peppers
- Optional Greek chicken
Greek Dressing Ingredients
- ¼ cup olive oil
- ¼ cup red wine vinegar (with a dash of red wine if you want extra flavor!)
- 1 garlic clove, minced (or ½ tsp garlic powder)
- 2 teaspoons dried oregano
- 1 teaspoon honey
- Salt and pepper to taste
Instructions:
- Make the dressing: In a small jar or bowl, whisk together olive oil, red wine vinegar, garlic, oregano, honey, salt, and pepper until well combined.
- Prep the salad: Add chopped lettuce to a large bowl. Top with tomatoes, cucumbers, olives, feta, and pepperoncini.
- Add optional protein: Slice cooked chicken and layer it on top. Garnish with green onions and more feta.
- Dress it up: Pour the red wine vinaigrette over the salad and toss to combine—or serve dressing on the side.
Tips:
- If you’re not going to eat all the salad at once, keep the dressing on the side so the salad will last longer
- The salad mixture is fantastic stuffed inside of a warm pita if you need a little extra something!
