Plus, it’s quick to prep, and the longer it marinates, the more flavor it absorbs!

Perfect for busy weeknights or meal prep—this marinade will quickly become your go-to for juicy, flavorful chicken every time.

Recipe

Ingredients:

  • 1 pound chicken
  • ⅓ cup Greek Yogurt
  • ¼ cup olive oil
  • 1 lemon, juice and zest
  • Oregano, garlic powder, sea salt, pepper, onion powder and red pepper flakes to taste

Instructions:

  • Marinate the chicken in the mixture for 30–180 minutes in the refrigerator. (The longer it marinates, the more flavorful it will be!)
  • Before cooking, shake off any excess marinade from the chicken. You don’t need to wipe it off completely, but removing extra marinade helps avoid burning and gives a better sear.
  • Grill or pan-sear the chicken over medium heat, about 6–8 minutes per side, depending on thickness. (If using a pan, you can cook the chicken in a little olive oil to help achieve a crispy exterior.)
  • Don’t flip the chicken while baking – give it time to develop that beautiful sear!

Tips:

  • I learned the very hard way NOT to have too much of a coating on the chicken before putting it into a hot pan! 😉 (Check out this article for the details on how a romantic breakup, red wine and Greek yogurt almost ruined my dinner, and tips on how I saved it!)
  • Watch your heat when using Greek yogurt – keep it on medium as the sugars in the yogurt can burn if the temperature is too high.
