Crispy Oven Roasted Potatoes (Easy Baking Soda Trick)
Bright, silky, and irresistibly creamy, this Lemon Pasta gets an upgrade with crispy chopped bacon. It’s fresh, rich, a little indulgent, and honestly… wildly satisfying!
Ingredients
- 1½ – 2 lbs potatoes of choice, cut into chunks (peel them if you want, we prefer peels on;)
- 2–3 tablespoons olive oil
- Salt
- Black pepper
- 1 teaspoon baking soda
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Bring a pot of salted water to a boil.
- Add the potatoes and the baking soda.
- Boil for about 8–10 minutes until the outsides are softened but the centers remain firm. (they should look a little mushy around the edges but stiff in the center)
- Drain well, and transfer to a bowl
- Add olive oil, salt, and pepper to the bowl
- Add the potatoes to the bowl and shake-shake-shake to rough up the edges. (This is where the magic starts. As you shake and rough up the potatoes the soft edges create a “batter” that coats the potatoes and transforms into crispy MAGIC!)
- Spread onto the baking sheet with a little breathing room so they roast instead of steam.
- Roast for 30–40 minutes, flipping once, until deeply golden and crispy.
- Let them sit for a few minutes before serving so the crust sets beautifully.
Variations
- Roughing up the potatoes = crispier, crunchier edges. Work out that aggression!!
- Use Yukon Golds for buttery interiors or Russets for maximum fluff.
- Add garlic powder, rosemary, or thyme for extra personality.
- Use Cayenne or Red Pepper Flakes for extra punch
- Finish with Parmesan for a savory crispy coating.
