Soft Dinner Roles (No Knead, No Bread Maker)

These soft dinner rolls are fluffy, tender, and unbelievably easy — no kneading, no breadmaker, just a simple dough that rises into warm, pull-apart perfection. The video shows you how to mix, rise, shape, and bake for soft, golden rolls every time!

Ingredients

  • 3 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tsp fine salt
  • 2 ¼ tsp instant yeast (one packet)
  • 1 cup warm milk (110°F)
  • 3 tbsp melted butter
  • 1 large egg
  • Optional: extra melted butter for brushing

Instructions

  • In a large bowl, whisk flour, sugar, salt, and instant yeast.
  • In a separate bowl, mix the warm milk, melted butter, and egg until smooth.
  • Pour the wet ingredients into the dry and stir with a spatula until the dough comes together. It should look sticky — that’s perfect for no-knead rolls.
  • Cover the bowl and let the dough rise in a warm spot for about one hour, or until doubled.
  • Lightly flour your hands and divide the dough into 12 pieces. Roll each piece into a smooth ball and place on a greased or parchment-lined baking sheet.
  • Cover and let rise again for 25–30 minutes.
  • Preheat oven to 375°F.
  • Bake for 14–17 minutes, until lightly golden on top.
  • Brush warm rolls with melted butter for the softest finish.

Tips & Variations

Honey Butter Rolls:
Brush the rolls with a mixture of melted butter and honey right after baking. It gives them a glossy, lightly sweet finish.

Garlic Herb Rolls:
Add garlic powder and Italian seasoning to the dough, then brush the tops with garlic butter as soon as they come out of the oven.

Buttermilk Rolls:
Swap the warm milk for warm buttermilk for extra tenderness and a subtle tang.

Potato Soft Rolls:
Replace ¼ cup of the flour with ¼ cup cooked mashed potato to make the rolls even softer and stay fresh longer.

Extra-Soft Pull-Apart Cluster:
