Burrito Lasagna

Ingredients

  • 4 large flour tortillas
  • 1 lb lean ground beef
  • 1 onion, finely chopped
  • 1 garlic clove, minced
  • 2 packets taco seasoning
  • 1 (16 oz) can refried beans
  • 2 (10 oz) cans RoTel diced tomatoes (I used the habanero kind!)
  • Cheese of choice for topping

Optional Toppings

  • Sour cream or Greek yogurt

  • Cilantro
  • Jalapeño
  • Shredded lettuce
  • Avocado
  • Diced tomatoes
  • Olives

Instructions:

  • Brown the ground beef in a skillet over medium heat until no pink remains.
  • Add the chopped onion and garlic; cook until softened, about 2–3 minutes.
  • Stir in the taco seasoning and refried beans. Mix well and heat through.
  • In a separate bowl, combine RoTel tomatoes with full-fat Greek yogurt.
  • Grease a baking pan with cooking spray or butter.
  • Lay down 2 tortillas in the bottom of the pan (overlapping is totally fine).
  • Spread half the beef mixture over the tortillas, then top with half of the RoTel/Greek yogurt sauce.
  • Add the remaining 2 tortillas, then the rest of the beef mixture and RoTel/Greek yogurt sauce.

  • Cover with foil and bake at 350°F for about 30 minutes, until hot and bubbly.
  • Remove the foil and bake for 5 more minutes—or broil for 2–3 minutes to brown the cheese.
  • Let the dish rest for a few minutes before serving.
  • Serve with your favorite toppings and enjoy!

  • Vegetarian version? Swap the meat for chickpeas, black beans, lentils, corn—or load it up with more refried beans.
  • Meat swaps? Ground turkey, chicken, or shredded rotisserie chicken work great too.
