Burrito Lasagna

Ingredients
- 4 large flour tortillas
- 1 lb lean ground beef
- 1 onion, finely chopped
- 1 garlic clove, minced
- 2 packets taco seasoning
- 1 (16 oz) can refried beans
- 2 (10 oz) cans RoTel diced tomatoes (I used the habanero kind!)
- Cheese of choice for topping

- Sour cream or Greek yogurt

- Jalapeño
- Shredded lettuce
- Avocado
- Diced tomatoes

Instructions:
- Brown the ground beef in a skillet over medium heat until no pink remains.
- Add the chopped onion and garlic; cook until softened, about 2–3 minutes.
- Stir in the taco seasoning and refried beans. Mix well and heat through.
- In a separate bowl, combine RoTel tomatoes with full-fat Greek yogurt.
- Grease a baking pan with cooking spray or butter.
- Lay down 2 tortillas in the bottom of the pan (overlapping is totally fine).
- Spread half the beef mixture over the tortillas, then top with half of the RoTel/Greek yogurt sauce.
- Add the remaining 2 tortillas, then the rest of the beef mixture and RoTel/Greek yogurt sauce.

- Cover with foil and bake at 350°F for about 30 minutes, until hot and bubbly.
- Remove the foil and bake for 5 more minutes—or broil for 2–3 minutes to brown the cheese.
- Let the dish rest for a few minutes before serving.
