Marshmallow Crunch Brownies

Decadent brownies with a fudgy brownie base, topped with gooey baked marshmallows and a rich peanut butter-chocolate topping.

Recipe

Ingredients:

  • Brownie box mix
  • Oil/water/eggs as box recipe calls for (substitute coffee for water for extra rich flavor) 
  • Topping Ingredients:
  • 1 bag of mini marshmallows 
  • 1 and 1/4 cups smooth peanut butter
  • 2 cups chocolate chips
  • 5 tablespoons butter
  • 3 cups Rice Krispies cereal

Instructions:

  • Bake brownies following box instructions but remove from oven 9 minutes early
  • Cover the brownies in the bag of mini marshmallows 
  • Bake for the remaining 9 minutes or until marshmallows are slightly golden brown 
  • Let brownies cool completely
  • Mix peanut butter and chocolate chips and microwave in 30 second increments until melted
  • Stir the melted chocolate chips and peanut butter together and fold in the Rice Krispies cereal
  • Spread the mixture on top of the brownies

Tip: For a more gooey texture, serve the brownies at room temperature. For some extra crunch, serve after refrigeration.
