Dense & Custardy Pancakes (No-Fluff Stack!)

If you hate airy, cakey pancakes, these are your new soulmate. Thick, custardy, melt-in-your-mouth pancakes that fry up golden and dense…and perfect for syrup pools.;)

Ingredients

  • 1 ¼ cups all-purpose flour
  • 4 tbsp sugar
  • 1 ½ tsp baking powder (less than usual as this keeps them dense)
  • ½ tsp salt
  • 1 cup buttermilk
  • 1 egg
  • 3 tbsp melted butter
  • 1 tsp vanilla (or Almond Extract if you want a bakery cake vibe)
  • Optional: 2–3 tbsp sour cream or Greek yogurt (for EXTRA density)

Instructions

  • In a bowl, whisk the flour, sugar, baking powder, and salt.
  • In a separate bowl, stir together the milk, egg, melted butter, and vanilla. (Add sour cream/Greek yogurt here if using.)
  • Pour the wet ingredients into the dry and mix just until combined (the batter should be thick.)
  • Heat a buttered skillet over medium.
  • Scoop batter on, keeping pancakes small and thick so they stay dense.
  • Cook until the edges look set and the bottoms are golden, then flip and cook until the centers feel firm (1–2 minutes).
  • Serve warm with butter and syrup!

Tips & Variations

  • Don’t overcook them – take them off sooner than you think because they will continue to cook after they’re removed from the heat.
  • For maximum density: Add the sour cream/Greek yogurt. It gives that custardy, almost cheesecake-like center.
  • For caramelized edges: Cook in extra butter and allow to get a touch golden on the outside
  • For chocolate chip pancakes: Use mini chips so they distribute evenly in thick batter.
  • For diner-style: Swap milk for evaporated milk — insanely rich!
  • For ultra-dense: Reduce milk to ¾ cup and spread the batter slightly in the pan.
